Ingredients
- 1/3 c. vegetable oil
- 1 1/2 c. mashed ripe bananas (about 3)
- 1/2 tsp. vanilla
- 3 eggs
- 2 1/3 c. buttermilk baking mix
- 1 c. sugar
- 1/2 c. chopped nuts
Method
- Heat oven to 350°.
- Generously grease bottom of a 9 x 5 x 3-inch loaf pan.
- Stir oil, bananas, vanilla, eggs, baking mix, sugar and nuts in pan with a fork until moistened; beat vigorously 1 minute.
- Bake until wooden pick inserted in center comes out clean, 55 to 65 minutes.
- Cool 5 minutes.
- Run knife or metal spatula around sides of loaf to loosen; remove from pan.
