Ingredients

  • 1/3 c. vegetable oil
  • 1 1/2 c. mashed ripe bananas (about 3)
  • 1/2 tsp. vanilla
  • 3 eggs
  • 2 1/3 c. buttermilk baking mix
  • 1 c. sugar
  • 1/2 c. chopped nuts

Method

  • Heat oven to 350°.
  • Generously grease bottom of a 9 x 5 x 3-inch loaf pan.
  • Stir oil, bananas, vanilla, eggs, baking mix, sugar and nuts in pan with a fork until moistened; beat vigorously 1 minute.
  • Bake until wooden pick inserted in center comes out clean, 55 to 65 minutes.
  • Cool 5 minutes.
  • Run knife or metal spatula around sides of loaf to loosen; remove from pan.
