Ingredients
- 1 stick each unsalted butter and margarine, softened
- 1/2 c. confectioners sugar
- 1/2 c. granulated sugar
- 1 large egg
- 1 1/2 tsp. vanilla extract
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 1/2 c. all-purpose flour
- 1 c. coarse white or colored sugar, or a combination
Method
- Heat oven to 375 degrees.
- Coat baking sheets with nonstick spray.
- In a large bowl, beat butter, margarine, confectioners and granulated sugar with mixer on low speed until blended.
- Increase to high until fluffy and light.
- Beat in egg, vanilla, baking powder and salt.
- On low, blend in flour.
- Roll dough into 1 inch balls.
- Roll balls in coarse sugar.
- Place about 2 inches apart on baking sheet.
- Flatten balls with the bottom of a glass or bottle into 2 inch rounds.
- Bake 10 minutes or until golden brown.
- Cool on baking sheets for 10 seconds or so before removing cookies to wire racks to cool completely.
