Ingredients

  • 1 stick each unsalted butter and margarine, softened
  • 1/2 c. confectioners sugar
  • 1/2 c. granulated sugar
  • 1 large egg
  • 1 1/2 tsp. vanilla extract
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 1/2 c. all-purpose flour
  • 1 c. coarse white or colored sugar, or a combination

Method

  • Heat oven to 375 degrees.
  • Coat baking sheets with nonstick spray.
  • In a large bowl, beat butter, margarine, confectioners and granulated sugar with mixer on low speed until blended.
  • Increase to high until fluffy and light.
  • Beat in egg, vanilla, baking powder and salt.
  • On low, blend in flour.
  • Roll dough into 1 inch balls.
  • Roll balls in coarse sugar.
  • Place about 2 inches apart on baking sheet.
  • Flatten balls with the bottom of a glass or bottle into 2 inch rounds.
  • Bake 10 minutes or until golden brown.
  • Cool on baking sheets for 10 seconds or so before removing cookies to wire racks to cool completely.
