Ingredients

  • 1 yeast cake
  • 1/2 c. lukewarm water
  • 1 c. hot mashed potatoes
  • 2/3 c. lard or shortening
  • 1/2 c. sugar
  • 1 full tsp. salt
  • 2 whole eggs
  • 1 c. milk (lukewarm)
  • 6 c. flour (approximately)

Method

  • Dissolve yeast in warm water.
  • Put hot mashed potatoes in a roomy bowl.
  • Add lard or shortening, sugar, salt and mix well. Add eggs, beat well.
  • Add yeast and milk.
  • Stir in the flour to make a soft dough.
  • Place in a greased bowl.
  • Turn over once to cover top with fat.
  • Cover.
  • Set in a warm place and allow to rise until double in bulk.
