Ingredients
- 2 c. white cornmeal
- 1 c. boiling water
- 1/2 tsp. salt
- 1 Tbsp. bacon drippings
Method
- Combine the cornmeal and salt in a small mixing bowl.
- Stir in boiling water and set the mixture aside to cool.
- Divide the mixture into 8 portions and shape each portion into a cake. Heat the drippings in a heavy skillet until hot, but not smoking. Add the cakes and fry over medium heat about 15 minutes, turning to brown both sides.
