Ingredients
- 1 medium onion
- 1 Tbsp. margarine
- 2 c. sliced fresh okra
- 2 c. fresh corn, cut off cob
- 3 c. peeled chopped tomatoes
- 1 tsp. sugar
- 1 tsp. salt
- 1 1/2 tsp. pepper
Method
- Saute onions in margarine until tender.
- Add okra and cook 5 minutes, stirring occasionally.
- Add remaining ingredients; stir well.
- Cover and simmer about 15 more minutes or until corn is tender.
- Makes 6 servings.
