Ingredients

  • 1 c. softened margarine
  • 1 c. brown sugar, firmly packed
  • 1 c. sugar
  • 2 eggs, beaten
  • 2 1/2 c. all-purpose flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. vanilla extract
  • 1 c. flaked coconut
  • 1 c. uncooked regular oats

Method

  • Cream margarine and sugar until light and fluffy.
  • Add eggs, blending well.
  • Combine flour, soda and salt; add to creamed mixture, mixing well.
  • Stir in vanilla, coconut and oats. Drop dough by teaspoonfuls on greased cookie sheet.
  • Bake at 375° about 8 to 10 minutes or until lightly browned.
  • Remove to wire rack immediately.
  • Yield:
  • 5 dozen.
