Ingredients

  • 1 (3 oz.) box strawberry-flavored gelatin
  • 1 c. water
  • 1/2 c. whipping cream
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1 c. confectioners sugar
  • 1 pt. strawberries, capped and sliced

Method

  • Combine gelatin and water in a medium saucepan over medium heat, stirring until gelatin dissolves.
  • Remove from heat; allow to cool.
  • In a chilled medium bowl, whip cream until stiff.
  • In a large bowl, beat cream cheese and sugar until fluffy.
  • Fold whipped cream into cream cheese mixture.
  • Fold in gelatin.
  • Spoon filling evenly into cooked cooled pie crust.
  • Cover and refrigerate until pie is set in center.
  • Arrange strawberries over filling.
  • Serve with Cool Whip topping.
  • Makes 8 to 10 servings.
