Ingredients
- 1 (3 oz.) box strawberry-flavored gelatin
- 1 c. water
- 1/2 c. whipping cream
- 1 (8 oz.) pkg. cream cheese, softened
- 1 c. confectioners sugar
- 1 pt. strawberries, capped and sliced
Method
- Combine gelatin and water in a medium saucepan over medium heat, stirring until gelatin dissolves.
- Remove from heat; allow to cool.
- In a chilled medium bowl, whip cream until stiff.
- In a large bowl, beat cream cheese and sugar until fluffy.
- Fold whipped cream into cream cheese mixture.
- Fold in gelatin.
- Spoon filling evenly into cooked cooled pie crust.
- Cover and refrigerate until pie is set in center.
- Arrange strawberries over filling.
- Serve with Cool Whip topping.
- Makes 8 to 10 servings.
