Ingredients

  • 1 c. oatmeal
  • 1 1/2 c. boiling water
  • 1 c. brown sugar
  • 1/2 c. shortening
  • 2 eggs, beaten
  • 1 1/3 c. flour
  • 1 tsp. soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 c white sugar

Method

  • Pour boiling water over oatmeal and let stand until cool. Cream brown sugar, white sugar and shortening together.
  • Add eggs and beat well.
  • Sift flour, soda, cinnamon and salt together and add to creamed mixture.
  • Beat.
  • Add oatmeal and beat well.
  • Bake in greased and floured 7 1/2 x 11-inch cake pan at 350° for 35 minutes.
