Ingredients
- 6 medium potatoes, boiled in skins (boiling potatoes)
- 2 c. sour cream
- 1 to 2 tsp. salt
- pepper
- 1/2 medium onion, minced
- 4 Tbsp. butter
- 2 c. sharp Cheddar cheese, shredded
Method
- Store cooked potatoes in refrigerator for 24 hours.
- Melt butter with cheese in double boiler.
- Add sour cream, salt, pepper and onion; stir until well blended.
- Remove from heat.
- Peel potatoes; grate them and stir into cheese mixture.
- Place in a baking dish.
- Bake at 350° for 45 minutes.
- Serves 8.
