Ingredients

  • 1 c. water
  • 1 envelope Knox unflavored gelatine
  • 16 oz. cream cheese (low-fat best), cubed
  • 3/4 c. Splenda
  • 1 tsp. vanilla
  • 2 Tbsp. sugar-free pudding mix (any flavor)

Method

  • In glass cup, sprinkle gelatine over water. Let stand for 2 minutes. Microwave on High until hot. Stir until dissolved. Add cream cheese cubes. Stir until dissolved. Blend with mixer. Add sugar substitute, vanilla and pudding mix. Pour into 12 paper lined muffin tins. Chill 2 hours or until firm.
