Ingredients

  • 1 hen, cooked well done
  • 3 ribs celery, cut in 1/4-inch pieces
  • 2 large onions, chopped
  • 2 bell peppers, chopped or 1 small can pimento, cut up
  • 1 qt. tomatoes, cut up
  • 1 stick margarine

Method

  • Take chicken off the bone. Cook onions, celery, peppers and tomatoes in margarine until tender.
  • Add this mixture and chicken to chicken broth.
  • Add a few crumbled crackers to thicken slightly.
  • Salt and pepper to taste.
  • Serve with saltines, ketchup and sliced onions.
