Ingredients

  • 7 ounces, weight Tortilla Chips
  • 2 whole Eggs
  • 1- 1/2 cup Grated Cheddar Cheese
  • 1/2 cups Your Favourite Salsa
  • 1 whole Green Or Red Pepper, Stem And Seeds Removed, Sliced

Method

  • Preheat oven to 400 F.
  • Process tortilla chips in a food processor until they form fine crumbs.
  • Crack 2 eggs into the crumbs and process until mixture begins to cling together.
  • Press mixture over the surface of 12-inch pizza pan.
  • It wont seem like enough, but wet your hands and persist.
  • I often finish up by rolling it out a bit more with a full beer bottle or jam jar.
  • Bake crust for 10 minutes.
  • Remove it from the oven and top with half of the cheese, then top with the salsa, pepper slices and a last layer of cheese.
  • Bake until the cheese melts, about 4 minutes.
  • Remove from oven.
  • Serve cut into wedges.
