Ingredients
- 3 to 4 c. rhubarb
- 1 egg
- 3 Tbsp. flour
- 1 3/4 c. sugar
- 3 Tbsp. water
- pie crust for 9-inch pie
Method
- Cut rhubarb in 1/4-inch slices.
- Place in bowl and add hot water from faucet.
- Let stand.
- Roll out pie crust and enough for lattice top.
- Mix together sugar, 3 tablespoons water and 3 tablespoons flour and egg.
- Beat until mixed.
- Drain rhubarb.
- Put in 9-inch crust lined pie pan.
- Pour sugar mixture over.
- Add lattice top crust.
- Bake 15 minutes at 415°, then 40 minutes at 375°.
