Ingredients

  • 3 to 4 c. rhubarb
  • 1 egg
  • 3 Tbsp. flour
  • 1 3/4 c. sugar
  • 3 Tbsp. water
  • pie crust for 9-inch pie

Method

  • Cut rhubarb in 1/4-inch slices.
  • Place in bowl and add hot water from faucet.
  • Let stand.
  • Roll out pie crust and enough for lattice top.
  • Mix together sugar, 3 tablespoons water and 3 tablespoons flour and egg.
  • Beat until mixed.
  • Drain rhubarb.
  • Put in 9-inch crust lined pie pan.
  • Pour sugar mixture over.
  • Add lattice top crust.
  • Bake 15 minutes at 415°, then 40 minutes at 375°.
