Ingredients

  • 1/4 c. cornstarch
  • 2/3 c. sugar
  • 1/4 tsp. salt
  • 2 c. milk
  • 2 or 3 egg yolks, slightly beaten
  • 2 Tbsp. butter or margarine
  • 1 tsp. vanilla extract
  • 1 (9-inch) baked pie shell
  • egg whites, stiffly beaten with 2 Tbsp. sugar to each egg white and dash of cream of tartar

Method

  • Mix cornstarch, sugar and salt; gradually add milk with egg yolks mixed in, to the dry mixture.
  • Cook over medium heat until thick, about 10 minutes, stirring constantly.
  • Cool; add butter and
  • vanilla.
  • Pour
  • into cooled baked shell and spread with meringue or Cool Whip.
  • If using meringue, bake in a 325° oven for 12 to 15 minutes.
