Ingredients
- 4 medium size new potatoes
- boiling salted water
- 1 large onion, chopped
- 2 Tbsp. margarine
- 1 lb. cooked sm. sausage, sliced 1/2 inch thick
- 1 Tbsp. Dijon-style mustard
- 1/2 tsp. salt
- 1/2 c. whipping cream
- 2 medium tomatoes, chopped
- snipped chives or parsley (for garnish)
Method
- Scrub potatoes.
- Cook in boiling, salted water until just cool enough to handle.
- Peel.
- Cut into 1-inch slices.
- In a large frying pan, cook onion in heated butter until soft.
- Add sausage slices.
- Cook, stirring often, until lightly browned.
- Mix in mustard, salt and cream.
- Bring to boiling.
- Lightly mix in tomatoes and potatoes. Cover.
- Cook over medium heat until potatoes are heated through, 3 to 5 minutes.
