Ingredients

  • 4 medium size new potatoes
  • boiling salted water
  • 1 large onion, chopped
  • 2 Tbsp. margarine
  • 1 lb. cooked sm. sausage, sliced 1/2 inch thick
  • 1 Tbsp. Dijon-style mustard
  • 1/2 tsp. salt
  • 1/2 c. whipping cream
  • 2 medium tomatoes, chopped
  • snipped chives or parsley (for garnish)

Method

  • Scrub potatoes.
  • Cook in boiling, salted water until just cool enough to handle.
  • Peel.
  • Cut into 1-inch slices.
  • In a large frying pan, cook onion in heated butter until soft.
  • Add sausage slices.
  • Cook, stirring often, until lightly browned.
  • Mix in mustard, salt and cream.
  • Bring to boiling.
  • Lightly mix in tomatoes and potatoes. Cover.
  • Cook over medium heat until potatoes are heated through, 3 to 5 minutes.
