Ingredients
- 1 c. raw rice
- 1 c. sliced green onions, including the tops
- 1 Tbsp. olive oil
- 1 c. sliced mushrooms
- 1 1/2 c. chicken broth
- 1/2 c. dry sherry
- 1 tsp. salt
- 1/2 tsp. pepper
Method
- Grease a 1 1/2 or 2-quart casserole.
- Sprinkle in the raw rice.
- Saute the green onions in the olive oil until they are soft.
- Add the remaining ingredients.
- Bring to a boil and then pour over the rice and stir.
- Cover the casserole and bake 25 to 30 minutes at 375° until the rice is tender.
