Ingredients

  • 3 eggs
  • 1 1/2 c. sugar
  • 1 c. oil
  • 2 c. grated zucchini
  • 3 tsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. nutmeg
  • 1 tsp. cloves
  • 1 tsp. baking powder
  • 3 tsp. cinnamon
  • 1 c. blueberries
  • 1/2 c. walnuts

Method

  • Beat eggs until foamy; add oil, sugar, vanilla and zucchini. Add all dry ingredients.
  • Blend well; add nuts and blueberries. Spoon into muffin tins.
  • Bake at 400° for 20 minutes.
  • I like to use 2 1/2-inch bake cups.
  • Fill 3/4 full.
  • Makes 2 dozen.
