Ingredients

  • 3/4 c. butter
  • 1/2 c. brown sugar
  • 1 1/2 c. flour
  • 1 1/2 c. coconut
  • 2 pkg. vanilla pudding (to cook)
  • 2 envelopes topping mix
  • 1 c. milk chocolate chips
  • 1/2 c. pecans
  • 3 c. milk

Method

  • Mix together until crumbly butter, coconut, brown sugar and flour. Press into a 9 x 13-inch pan. Scatter the remainder on a baking sheet. Bake at 350° for 10 minutes, stirring baking sheet (not crust). Cook pudding with milk as directed. Whip topping mix as per instructions. Fold into pudding with chocolate chips and pecans. Pour over crust. Crumble crumbs over the top. Refrigerate overnight. This freezes well.
