Ingredients
- 2 1/2 to 3 c. cut up rhubarb
- 1 unbaked pie shell (no top crust)
- 3 eggs, well beaten
- 1 1/2 c. sugar
- 3 Tbsp. flour
- 2 Tbsp. milk
Method
- Place rhubarb into unbaked pie shell.
- Mix eggs, sugar, flour and milk together and pour over fruit.
- (Mix flour and sugar together to help prevent lumps and then add to eggs.)
- Bake at 400° for 50 to 60 minutes until knife inserted near center comes out clean.
- Serve warm or cold.
