Ingredients

  • 1 (3 oz.) pkg. lime gelatin
  • 1 c. boiling water
  • 1 Tbsp. mayonnaise
  • 1 Tbsp. lemon juice
  • 1/4 c. plus 3 Tbsp. cold water
  • 2 avocados, peeled and diced
  • 1 (13 oz.) can crushed pineapple

Method

  • Dissolve gelatin in boiling water; add mayonnaise and beat until frothy.
  • Drain pineapple, saving juice.
  • Add pineapple juice, lemon juice and cold water to gelatin mixture and blend well. Add crushed pineapple and avocados.
  • Pour into 8-inch square Pyrex dish.
  • Chill until firm.
  • Cut into squares and place each square on lettuce leaf to serve.
  • Makes 8 to 10 servings.
