Ingredients
- 1 (3 oz.) pkg. lime gelatin
- 1 c. boiling water
- 1 Tbsp. mayonnaise
- 1 Tbsp. lemon juice
- 1/4 c. plus 3 Tbsp. cold water
- 2 avocados, peeled and diced
- 1 (13 oz.) can crushed pineapple
Method
- Dissolve gelatin in boiling water; add mayonnaise and beat until frothy.
- Drain pineapple, saving juice.
- Add pineapple juice, lemon juice and cold water to gelatin mixture and blend well. Add crushed pineapple and avocados.
- Pour into 8-inch square Pyrex dish.
- Chill until firm.
- Cut into squares and place each square on lettuce leaf to serve.
- Makes 8 to 10 servings.
