- 1 (3 oz.) pkg. lemon flavor gelatin
- 1 c. boiling water
- 1/2 c. cold water
- 1/2 c. mayonnaise
- 2 Tbsp. vinegar
- 1/4 tsp. salt
- 1 c. shredded cabbage
- 1/2 c. sliced radishes
- 1/4 c. chopped celery
- 1/4 c. finely chopped green pepper
- 1/4 c. minced onion
- 1/4 c. finely chopped cucumber
Method
- Dissolve gelatin in boiling water.
- Stir in cold water. Combine mayonnaise, vinegar and salt.
- Gradually stir some of gelatin into mayonnaise blending well.
- Stir mayonnaise mixture into remaining gelatin stirring well.
- Chill until thick and syrupy.
- Fold in cabbage, radishes, celery, green pepper, onion and cucumber.
- Pour into lightly oiled 4-cup mold.
- Chill until set.
- Makes 6 to 8 servings.
