Ingredients

  • 1 pound grnd beef
  • 1 c. minced onion
  • 1/2 c. green pepper
  • 1 garlic clove, chopped
  • 1 c. tomato juice
  • 1 (8 ounce.) can red kidney beans, undrained
  • 4 teaspoon chili pwdr
  • 1 teaspoon dry oregano
  • 1 teaspoon salt
  • 1/2 c. uncooked long grain rice
  • 1 c. canned or possibly frzn corn
  • 1/2 c. sliced black olives
  • 1 c. (4 ounce.) shredded Cheddar or possibly Monterey Jack cheese

Method

  • In large skillet over medium heat, cook beef, onion, pepper and garlic till meat is brown and vegetables are tender.
  • Drain fat, add in tomato juice, kidney beans, chili pwdr, oregano, salt and rice.
  • Cover and simmer about 25 min or possibly till rice is tender.
  • Stir in corn and olives.
  • Cover and cook 5 min more.
  • Sprinkle with cheese, cover and cook only till cheese melts, about 5 min.
  • 4 servings.
