Ingredients

  • 3/4 c. Blackberries
  • 1/2 tsp sugar
  • 1 1/4 c. vanilla low fat ice cream divided
  • 1 1/2 c. club soda, chilled divided
  • 1 c. Blackberry sherbet
  • 1 c. orange sherbet

Method

  • Press Blackberries through a sieve over a bowl; throw away seeds.
  • Combine Blackberry pulp and sugar; stir well.
  • Divide the Blackberry mix proportionately among 4 parfait glasses.
  • Spoon 1 tbsp ice cream into each glass; stir well.
  • Stir 2 tbsp club soda into each glass.
  • Spoon 1/4 c. ice cream, 1/4 c. Blackberry sherbet and 1/4 c. orange sherbet into each glass; pour 1/4 c. club soda over sherbets.
  • Serve immediately.
