Ingredients
- 2 lb. turnip greens
- 1 lb. mustard greens
- 1 lb. spinach
- 1/4 c. salt
- 1 lb. salt pork or bacon
- 1 small onion, chopped
- 2 Tbsp. sugar
- 2 tsp. crushed red pepper
Method
- Strip greens from stalk.
- Wash in cold water in which the salt has been added.
- Wash 3 or 4 times in cold water or until water is clear of grit and sand; drain thoroughly.
- In an 8-quart pot, put 2 quarts of boiling water; add rinsed salt pork or bacon and onion. Add all the greens, sugar and salt to taste.
- Cover tightly and simmer 2 hours.
- If frozen greens are used, simmer 1 hour.
- Add crushed red pepper for extra flavor.
- Serve hot.
