Ingredients

  • 2 lb. turnip greens
  • 1 lb. mustard greens
  • 1 lb. spinach
  • 1/4 c. salt
  • 1 lb. salt pork or bacon
  • 1 small onion, chopped
  • 2 Tbsp. sugar
  • 2 tsp. crushed red pepper

Method

  • Strip greens from stalk.
  • Wash in cold water in which the salt has been added.
  • Wash 3 or 4 times in cold water or until water is clear of grit and sand; drain thoroughly.
  • In an 8-quart pot, put 2 quarts of boiling water; add rinsed salt pork or bacon and onion. Add all the greens, sugar and salt to taste.
  • Cover tightly and simmer 2 hours.
  • If frozen greens are used, simmer 1 hour.
  • Add crushed red pepper for extra flavor.
  • Serve hot.
