Ingredients

  • 2 cups cubed cantaloupe
  • 2 cups cubed watermelon
  • 1 cup thinly sliced cucumber (about 1 small cucumber)
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons sugar
  • 1 tablespoon minced onion
  • 3 tablespoons raspberry-flavored vinegar

Method

  • Combine first 4 ingredients in a large bowl.
  • Combine sugar, onion, and vinegar in a small jar. Cover tightly, and shake vigorously. Pour over melon mixture; toss gently.
  • Serve immediately, or cover and chill up to 2 hours. Serve with a slotted spoon.
