Ingredients
- 2 cups cubed cantaloupe
- 2 cups cubed watermelon
- 1 cup thinly sliced cucumber (about 1 small cucumber)
- 2 tablespoons chopped fresh mint
- 2 tablespoons sugar
- 1 tablespoon minced onion
- 3 tablespoons raspberry-flavored vinegar
Method
- Combine first 4 ingredients in a large bowl.
- Combine sugar, onion, and vinegar in a small jar. Cover tightly, and shake vigorously. Pour over melon mixture; toss gently.
- Serve immediately, or cover and chill up to 2 hours. Serve with a slotted spoon.
