Ingredients
- 1 Tbsp. oil
- 1 Tbsp. butter
- 1 lb. boneless chicken cutlets
- 1 large jar medium salsa
- 1 c. red wine
- 1 pkg. Spanish rice
Method
- In large skillet in oil and butter, lightly brown the chicken cutlets on both sides.
- Pour salsa and wine on top of cutlets; simmer about 15 to 20 minutes until cutlets are thoroughly cooked. While cutlets are cooking, prepare rice and serve cutlets over rice.
