Ingredients

  • 3 egg whites
  • 1/2 cup sugar
  • 2 1/2 cups grated coconut
  • curd Orange, to taste

Method

  • Preheat oven to 180 degrees Celsius.
  • In a bowl, whisk the egg whites until foamy, with sugar and grated coconut. It may seem that the result is a somewhat loose dough, but it actually works.
  • Place a small ball of dough in small silicone tartlet pans. Use your fingers to open a hole in the center, and press the dough against the sides of the pans.
  • Place the pans on a baking tray, and bake for about 10 minutes.
  • Remove from oven, and let cool in the molds.
  • When cold, fill the center with orange curd. Refrigerate until serving.
