Ingredients
- 3 egg whites
- 1/2 cup sugar
- 2 1/2 cups grated coconut
- curd Orange, to taste
Method
- Preheat oven to 180 degrees Celsius.
- In a bowl, whisk the egg whites until foamy, with sugar and grated coconut. It may seem that the result is a somewhat loose dough, but it actually works.
- Place a small ball of dough in small silicone tartlet pans. Use your fingers to open a hole in the center, and press the dough against the sides of the pans.
- Place the pans on a baking tray, and bake for about 10 minutes.
- Remove from oven, and let cool in the molds.
- When cold, fill the center with orange curd. Refrigerate until serving.
