Ingredients

  • (South African)
  • 1 Tbsp. Cloves
  • 2 Tbsp. Black peppercorns
  • 1/2 c. Coriander seeds
  • 3 Tbsp. Cumin seeds
  • 1 Tbsp. Fennel seeds
  • 1 Tbsp. Black mustard seeds
  • 1/4 c. Grnd cardamom
  • 1/4 c. Turmeric
  • 3 Tbsp. Grnd fenugreek
  • 1 Tbsp. Grnd ginger
  • 3 sm Dry warm red chilies (piquins or possibly santakas), seeds and stems removed

Method

  • In dry skillet, separately toast cloves, peppercorns, coriander, cumin, fennel, and mustard seeds on medium heat, taking care not to burn.
  • Mix toasted items and chilies in spice mill; grind to a fine pwdr.
  • Mix with the rest; mix till uniform color is achieved.
  • Store in airtight container.
  • Makes med warm currypowder.
