Ingredients
- 4 medium potatoes, cleaned and dried
- 1/4 c. margarine
- 1/2 c. grated Cheddar cheese
- 1 Tbsp. grated onion
- 1/2 tsp. salt
- pepper to taste
- 3/4 c. milk
- paprika
Method
- Prick potato skins with a fork.
- Microwave on High for 8 minutes; turn potatoes over.
- Microwave on High for 8 minutes longer.
- Slice hot potatoes lengthwise; scoop out insides, saving shells.
- Whip potatoes, margarine, cheese, onion, salt and pepper together.
- Blend in milk gradually.
- Spoon potato mixture into shells.
- Microwave on High for 5 minutes longer.
- Sprinkle with paprika.
