Ingredients

  • 4 medium potatoes, cleaned and dried
  • 1/4 c. margarine
  • 1/2 c. grated Cheddar cheese
  • 1 Tbsp. grated onion
  • 1/2 tsp. salt
  • pepper to taste
  • 3/4 c. milk
  • paprika

Method

  • Prick potato skins with a fork.
  • Microwave on High for 8 minutes; turn potatoes over.
  • Microwave on High for 8 minutes longer.
  • Slice hot potatoes lengthwise; scoop out insides, saving shells.
  • Whip potatoes, margarine, cheese, onion, salt and pepper together.
  • Blend in milk gradually.
  • Spoon potato mixture into shells.
  • Microwave on High for 5 minutes longer.
  • Sprinkle with paprika.
