Ingredients
- 2 Tbsp. white wine vinegar
- 1 tsp. Dijon mustard
- 1/4 c. vegetable oil
- 3 Tbsp. olive oil
- 1/4 tsp. ground pepper
- 2 oz. Bleu cheese, crumbled
- 2 Tbsp. minced shallots
Method
- Mix vinegar and mustard in a small bowl.
- Whisk in both oils in a thin stream. Add cheese, shallots and pepper.
- Let stand at least 30 minutes to blend flavors.
- (Can be prepared 1 day ahead and refrigerated.)
