Ingredients
- 1/2 c. bias-sliced celery
- 3 green onions, cut
- 2 Tbsp. olive or cooking oil
- 1 clove garlic, minced
- 1/8 tsp. crushed red pepper
- 3 medium green tomatoes, each cut into 6 wedges
- 1 Tbsp. snipped parsley
- salt
- cracked black pepper
Method
- In microwave-safe bowl, combine celery, onions, oil, garlic and red pepper.
- Cook, covered, on High for 1 1/2 minutes. Arrange tomato wedges in dish.
- Add onion mixture.
- Sprinkle with parsley.
- Cook, covered, on High 4 minutes or until tomatoes are tender and heated.
- Rotate dish once after 2 minutes.
- Add seasoning.
