Ingredients

  • 1/2 c. bias-sliced celery
  • 3 green onions, cut
  • 2 Tbsp. olive or cooking oil
  • 1 clove garlic, minced
  • 1/8 tsp. crushed red pepper
  • 3 medium green tomatoes, each cut into 6 wedges
  • 1 Tbsp. snipped parsley
  • salt
  • cracked black pepper

Method

  • In microwave-safe bowl, combine celery, onions, oil, garlic and red pepper.
  • Cook, covered, on High for 1 1/2 minutes. Arrange tomato wedges in dish.
  • Add onion mixture.
  • Sprinkle with parsley.
  • Cook, covered, on High 4 minutes or until tomatoes are tender and heated.
  • Rotate dish once after 2 minutes.
  • Add seasoning.
