Ingredients
- 2 c. minute rice
- Minced onions
- Salt and pepper
- 2 cans tomato sauce
- Green pepper
- Water
Method
- Brown 2 c. minute rice with minced onions and green pepper.
- Put this in a microwaveable dish approximately 8 x 12 x 2 inch and add in 2 cans of tomato sauce and water to cover rice; then salt and pepper.
- Add in more water if not moist sufficient.
- Microwave on high about 6-7 min till tender.
- This is a good dish with Mexican food, but I also use it with stuffed peppers, cooking them right in the rice mix.
- I also use it with pork chops, browning first and then finish cooking in the rice.
