Ingredients

  • 2 c. minute rice
  • Minced onions
  • Salt and pepper
  • 2 cans tomato sauce
  • Green pepper
  • Water

Method

  • Brown 2 c. minute rice with minced onions and green pepper.
  • Put this in a microwaveable dish approximately 8 x 12 x 2 inch and add in 2 cans of tomato sauce and water to cover rice; then salt and pepper.
  • Add in more water if not moist sufficient.
  • Microwave on high about 6-7 min till tender.
  • This is a good dish with Mexican food, but I also use it with stuffed peppers, cooking them right in the rice mix.
  • I also use it with pork chops, browning first and then finish cooking in the rice.
