- 1 tbsp. extra virgin olive oil
- 1 sm. onion, minced
- 1 c. carrots, sliced
- 1 c. celery
- 1 c. zucchini
- 1/2 c. yellow pepper, diced (optional)
- 2 (13 3/4 ounce.) cans beef broth
- 1 (28 ounce.) can whole peeled tomatoes, minced with their juices
- 1 c. med. pasta shells, cooked
- 1 (10 ounce.) can whole white kidney beans
- 1/2 teaspoon basil
- Salt
- Pepper
Method
- In a 2-qt microwave casserole, mix oil and vegetables, except tomatoes.
- Cover loosely with heavy duty plastic wrap and microwave on high for 5 min.
- Add in remaining ingredients.
- Salt and pepper to taste.
- Microwave on high 15 min.
- Serves 4.
