Ingredients

  • 1 tbsp. extra virgin olive oil
  • 1 sm. onion, minced
  • 1 c. carrots, sliced
  • 1 c. celery
  • 1 c. zucchini
  • 1/2 c. yellow pepper, diced (optional)
  • 2 (13 3/4 ounce.) cans beef broth
  • 1 (28 ounce.) can whole peeled tomatoes, minced with their juices
  • 1 c. med. pasta shells, cooked
  • 1 (10 ounce.) can whole white kidney beans
  • 1/2 teaspoon basil
  • Salt
  • Pepper

Method

  • In a 2-qt microwave casserole, mix oil and vegetables, except tomatoes.
  • Cover loosely with heavy duty plastic wrap and microwave on high for 5 min.
  • Add in remaining ingredients.
  • Salt and pepper to taste.
  • Microwave on high 15 min.
  • Serves 4.
