Ingredients
- 1 c. raw rice
- 1 stick margarine
- 4 eggs
- milk
- 1/2 c. sugar or more to taste
- raisins
- cinnamon
Method
- Cook rice until tender.
- In 9-inch square baking dish melt margarine.
- In separate bowl combine eggs and milk and beat.
- Add sugar and beat some more.
- Add rice to margarine.
- Add egg, milk and sugar mixture into baking dish with margarine and rice.
- Stir gently, blending.
- Sprinkle a bountiful amount of raisins in and stir.
- Add milk to almost filling dish, allowing room for expansion while cooking.
- Sprinkle with cinnamon.
- Cover dish and bake in microwave until done.
- Caution:
- Do not overbake.
