Ingredients

  • 3 Tbsp. chopped green pepper
  • 2 Tbsp. chopped onion
  • 2 tsp. butter or margarine
  • 3 eggs
  • 1/2 c. fully cooked chopped ham
  • 1 Tbsp. milk
  • 1/8 tsp. dry mustard
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • bread or toast

Method

  • Combine green pepper, onion and butter in small mixing bowl. Microwave at High 1 to 2 1/2 minutes or until vegetables are tender.
  • Stir in eggs, chopped ham, milk and seasonings.
  • Pour into two small saucers.
  • Microwave at High 2 to 5 minutes or until eggs are almost set, pushing cooked portions toward center of dish and rotating saucers once or twice during cooking.
  • Serve open-face or as sandwiches with bread or toast.
  • Serves 4.
