Ingredients

  • 1 lb. hamburger
  • 1 small can refried beans
  • 1 tsp. oregano
  • 1/2 tsp. cumin
  • 1 pkg. manicotti shells
  • 1 1/4 c. water
  • 1 (8 oz.) sour cream
  • 1 (16 oz.) picante sauce
  • green onion, chopped
  • 2 c. Monterey Jack cheese, shredded

Method

  • Combine cooked and seasoned (with salt and pepper) hamburger, beans, oregano and cumin.
  • Mix well.
  • Fill uncooked shells with meat mixture.
  • Arrange in large 8 1/2 x 11-inch baking dish. Combine water and picante sauce.
  • Pour over shells.
  • Cover with vented plastic wrap.
  • Microwave for 10 minutes, giving dish a 1/2 turn once.
  • Using tongs, turn shells over.
  • Microwave, covered, 17 to 19 minutes, until shells are tender.
  • Top with cheese and melt. Spoon sour cream down middle.
  • Sprinkle green onions on top of sour cream.
