Ingredients
- 1 c. flour
- 1/4 c. sugar
- 4 tsp. baking powder
- 3/4 tsp. salt
- 1 c. yellow cornmeal
- 2 eggs
- 1 c. milk
- 1/4 c. shortening
- 1 can Mexican style corn, drained
Method
- Mix everything just until blended.
- Pour into greased 8 x 8 x 2-inch pan.
- Bake 20 to 25 minutes at 425° (goes great with chili).
