Ingredients

  • 1 whole chicken, boiled
  • 1 large onion
  • 1 can green chiles
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 lb. Longhorn Cheddar cheese
  • 15 to 18 corn tortillas
  • 2 c. chicken

Method

  • Boil chicken until well done.
  • Debone and cut into bite size. Reserve 2 cups broth.
  • Saute onion in butter until slightly cooked.
  • Tear tortillas into small pieces into large bowl.
  • Add chicken, broth, onion, chilies and soups.
  • Mix well.
  • Add 1/2 of the cheese and mix slightly.
  • Pour into baking dish.
  • Top with 1/2 cheese.
  • Bake at 350° for 35 to 40 minutes.
