- 1 whole chicken, boiled
- 1 large onion
- 1 can green chiles
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 lb. Longhorn Cheddar cheese
- 15 to 18 corn tortillas
- 2 c. chicken
Method
- Boil chicken until well done.
- Debone and cut into bite size. Reserve 2 cups broth.
- Saute onion in butter until slightly cooked.
- Tear tortillas into small pieces into large bowl.
- Add chicken, broth, onion, chilies and soups.
- Mix well.
- Add 1/2 of the cheese and mix slightly.
- Pour into baking dish.
- Top with 1/2 cheese.
- Bake at 350° for 35 to 40 minutes.
