Ingredients

  • 1 (2 1/2 to 3 lb.) chicken, cut into pieces
  • 1/4 c. shortening
  • 1/2 c. all-purpose flour
  • 1 tsp. salt
  • 1 tsp. paprika
  • 1/4 c. pepper
  • 1/4 c. cracker meal

Method

  • Wash chicken and pat dry.
  • In a 13 x 9 x 2-inch pan, melt shortening.
  • Mix all dry ingredients and coat chicken pieces. Place chicken, skin side down, in melted shortening.
  • Bake at 425° for 30 minutes.
  • Turn chicken; cook 30 minutes longer or until thickest piece is tender.
  • Yields 4 servings.
