Ingredients
- 1 (2 1/2 to 3 lb.) chicken, cut into pieces
- 1/4 c. shortening
- 1/2 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. paprika
- 1/4 c. pepper
- 1/4 c. cracker meal
Method
- Wash chicken and pat dry.
- In a 13 x 9 x 2-inch pan, melt shortening.
- Mix all dry ingredients and coat chicken pieces. Place chicken, skin side down, in melted shortening.
- Bake at 425° for 30 minutes.
- Turn chicken; cook 30 minutes longer or until thickest piece is tender.
- Yields 4 servings.
