Ingredients

  • 1 pound ground beef
  • 1 egg lightly beaten
  • 1/4 cup fresh breadcrumbs
  • 3 cloves garlic minced
  • 3 slices bacon finely chopped
  • 2 tablespoons fresh parsley leaves chopped
  • 2 tablespoons oil
  • 1 onion chopped
  • 1 tablespoon smoked paprika
  • 4 cups chicken stock
  • 2 tomatoes diced
  • 1 red pepper deseeded, roughly chopped
  • 10 1/2 ounces long grain rice
  • 13 1/2 ounces kidney beans drained, rinsed
  • 3 1/2 ounces green beans trimmed
  • 1 green chili long, deseeded, thinly sliced, optional

Method

  • Combine ground beef, egg, breadcrumbs, 1 clove garlic, bacon and parsley. Season. Roll into 20 meatballs.
  • Heat oil in a large saucepan over medium heat. Working in batches, cook meatballs for 5 mins, until browned all over. Set aside.
  • Add onion, remaining garlic and paprika. Cook for 1 min, until fragrant. Add 3 1/4 cups stock, tomatoes, pepper and rice. Bring to a boil. Cook, covered, for 10 mins, until rice is almost tender.
  • Add remaining stock, meatballs, kidney beans and green beans. Cook for 5 mins. Spoon into serving bowls and sprinkle with chili, if using. Serve.
