- 1 lb. fresh backfin crab meat
- 1/2 c. bread crumbs
- 1 egg, beaten
- 5 Tbsp. mayonnaise
- 1 Tbsp. minced fresh parsley
- 2 tsp. Worcestershire sauce
- 1 tsp. mustard
- 1 tsp. salt
- 1/4 tsp. freshly ground pepper
Method
- Remove cartilage from crab meat.
- In a bowl, mix bread crumbs, egg, mayonnaise, parsley, Worcestershire sauce, mustard, salt and pepper together well.
- Pour mixture over crab meat and fold in lightly but thoroughly.
- Form into six cakes.
- Saute in butter for 3 minutes or until golden brown, turning once.
