Ingredients

  • 1 lb. fresh backfin crab meat
  • 1/2 c. bread crumbs
  • 1 egg, beaten
  • 5 Tbsp. mayonnaise
  • 1 Tbsp. minced fresh parsley
  • 2 tsp. Worcestershire sauce
  • 1 tsp. mustard
  • 1 tsp. salt
  • 1/4 tsp. freshly ground pepper

Method

  • Remove cartilage from crab meat.
  • In a bowl, mix bread crumbs, egg, mayonnaise, parsley, Worcestershire sauce, mustard, salt and pepper together well.
  • Pour mixture over crab meat and fold in lightly but thoroughly.
  • Form into six cakes.
  • Saute in butter for 3 minutes or until golden brown, turning once.
