Ingredients

  • 1 12 cups sour cream
  • 12 cup butter or 12 cup margarine
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 12 teaspoon baking soda
  • 12 teaspoon salt
  • 1 cup blueberries
  • 14 cup sugar
  • 14 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon butter
  • 12 cup chopped pecans
  • 12 teaspoon cinnamon
  • icing sugar, for dusting

Method

  • Preheat the oven to 350F Grease a bundt cake pan and set aside.
  • In a large bowl, cream the sugar, butter, eggs & vanilla.
  • In a separate bowl, combine the flour baking powder, baking soda and salt.
  • Add the dry ingredients alternately with the sour cream to the creamed butter until well mixed.
  • Pour 1/2 of the batter into the bundt pan.
  • In a bowl, gently combine the blueberries and 1/4 cup sugar.
  • Layer over the batter.
  • Pour the remaining batter over the blueberries.
  • Combine the topping ingredients then sprinkle on top of the cake.
  • Bake for 55-60 minutes or until a cake tester comes out clean.
  • Cool for 10 minutes then remove from pan and allow to cool on a rack.
