Ingredients
- 1 c. butter flavor Crisco
- 2 1/2 c. sugar
- 4 eggs
- 1 tsp. grated lemon peel
- 2 Tbsp. lemon juice
- 2 tsp. vanilla
- 3 1/2 c. all-purpose flour
- 1 tsp. salt
- 1 1/3 c. skim milk
Method
- Heat oven to 350°.
- Grease two 9 x 5 x 2 3/4-inch loaf pans with butter flavor Crisco.
- Flour lightly.
- Combine butter flavor Crisco, sugar, eggs, grated lemon peel, lemon juice and vanilla in large bowl.
- Beat at low speed of electric mixer until blended, scraping bowl constantly.
- Beat at high speed for 5 minutes, scraping bowl occasionally.
- Combine flour, baking powder and salt in medium bowl.
- Add to batter alternately with milk at low speed. Beat until batter is smooth after each addition; pour into pans. Bake at 350° for 58 to 62 minutes, or until deep golden brown and toothpick inserted in center comes out clean.
- Cool on cooling rack for 20 minutes.
- Turn out of pan onto rack; cool completely. Makes 2 loaves.
