- 6 small zucchini, thinly sliced
- 1/2 c. chopped green pepper
- 1/2 c. diced celery
- 2/3 c. vinegar
- 1/2 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. diced onion
- 1 jar (2 oz.) diced pimento, drained
- 1/3 c. vegetable oil
- 3 Tbsp. white wine vinegar
Method
- Combine zucchini, green pepper, celery, onion and pimento in a medium bowl; set aside.
- Combine all remaining ingredients in a jar; cover tightly and shake vigorously.
- Pour marinade over vegetables; toss gently.
- Cover and chill 8 hours or overnight. Serve with a slotted spoon.
- Serve with hot buttered bread rolls. Makes 8 servings.
