Ingredients

  • 6 small zucchini, thinly sliced
  • 1/2 c. chopped green pepper
  • 1/2 c. diced celery
  • 2/3 c. vinegar
  • 1/2 c. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. diced onion
  • 1 jar (2 oz.) diced pimento, drained
  • 1/3 c. vegetable oil
  • 3 Tbsp. white wine vinegar

Method

  • Combine zucchini, green pepper, celery, onion and pimento in a medium bowl; set aside.
  • Combine all remaining ingredients in a jar; cover tightly and shake vigorously.
  • Pour marinade over vegetables; toss gently.
  • Cover and chill 8 hours or overnight. Serve with a slotted spoon.
  • Serve with hot buttered bread rolls. Makes 8 servings.
