Ingredients

  • 1 pkg. orange or lemon gelatin
  • 1 1/2 c. boiling water
  • 1 large pkg. cream cheese
  • 2 Tbsp. orange or lemon juice
  • 1 c. grated carrots
  • 1/2 tsp. salt
  • 1 tsp. sugar
  • 1/8 tsp. white pepper
  • 1 Tbsp. finely chopped parsley, chives or dill

Method

  • Dissolve gelatin in boiling water.
  • Cool.
  • Add orange or lemon juice to cream cheese and cream until smooth.
  • Add carrot, sugar, salt, pepper and parsley to cream cheese.
  • Gradually add cooled gelatin and pour mixture into a mold.
  • Chill until firm.
  • Unmold on lettuce leaves.
  • Serve with mayonnaise or salad dressing.
