Ingredients
- 1 pkg. orange or lemon gelatin
- 1 1/2 c. boiling water
- 1 large pkg. cream cheese
- 2 Tbsp. orange or lemon juice
- 1 c. grated carrots
- 1/2 tsp. salt
- 1 tsp. sugar
- 1/8 tsp. white pepper
- 1 Tbsp. finely chopped parsley, chives or dill
Method
- Dissolve gelatin in boiling water.
- Cool.
- Add orange or lemon juice to cream cheese and cream until smooth.
- Add carrot, sugar, salt, pepper and parsley to cream cheese.
- Gradually add cooled gelatin and pour mixture into a mold.
- Chill until firm.
- Unmold on lettuce leaves.
- Serve with mayonnaise or salad dressing.
