Ingredients

  • 3 egg whites
  • 1/2 tsp. cream of tartar
  • 1 c. sugar
  • 6 saltine crackers, crushed
  • 1/2 c. quick cooking oatmeal
  • 1/2 c. broken pecan pieces or coconut
  • 1 tsp. vanilla

Method

  • Beat egg whites and cream of tartar until foamy. Add sugar, very gradually, beating constantly, until stiff.
  • Fold in crackers, then oatmeal, then nuts or coconut.
  • Gently stir in vanilla.
  • Pour into a well-greased 9-inch pie pan.
  • Bake in a preheated 375° oven for 25 minutes. Top with whipped cream and fresh strawberries. This pie makes its own crust.
