Ingredients
- 3 egg whites
- 1/2 tsp. cream of tartar
- 1 c. sugar
- 6 saltine crackers, crushed
- 1/2 c. quick cooking oatmeal
- 1/2 c. broken pecan pieces or coconut
- 1 tsp. vanilla
Method
- Beat egg whites and cream of tartar until foamy. Add sugar, very gradually, beating constantly, until stiff.
- Fold in crackers, then oatmeal, then nuts or coconut.
- Gently stir in vanilla.
- Pour into a well-greased 9-inch pie pan.
- Bake in a preheated 375° oven for 25 minutes. Top with whipped cream and fresh strawberries. This pie makes its own crust.
