Ingredients
- 2 (16 oz.) cans white Shoepeg corn, drained or 1 can white corn and 1 can yellow corn
- 1/2 c. chopped green pepper
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1 small jar chopped pimento
- 1/2 c. oil
- 1/2 c. vinegar
- 1/2 c. sugar
Method
- Drain corn.
- Mix corn, pepper, onion, celery and pimento.
- In separate bowl, mix oil, vinegar and sugar.
- Pour over corn mixture and marinate 24 hours.
- Serve chilled.
