Ingredients
- 1 (No. 300) can black-eyed peas
- 1 rib celery, chopped
- 1 Tbsp. finely chopped onion
- 1 Tbsp. each: salad oil, vinegar and mayonnaise
- dash of cayenne pepper
- 1 ripe tomato, diced
- 1/4 tsp. salt (if needed)
Method
- Drain peas. Rinse with cold water. Drain well. Add celery and onion. Combine oil, vinegar, mayonnaise and cayenne. Mix well. Pour over peas. Stir gently. Chill in refrigerator several hours or overnight. At serving time, add tomato and salt if needed.
