Ingredients

  • 3 medium potatoes
  • 3 slices bacon
  • 1/3 c. chopped onion
  • 1 Tbsp. flour
  • 1 Tbsp. sugar
  • 3/4 tsp. salt
  • 1/4 tsp. celery seed
  • dash of pepper
  • 1/3 c. water
  • 3 Tbsp. vinegar

Method

  • Peel and cube potatoes into microwave-safe bowl with lid. Cook on High 5 to 8 minutes or until done. Fry and drain bacon. Crumble. Saute onion in small amount of bacon fat until golden. Blend in flour and seasonings. Cook over low heat, stirring until smooth and bubbly. Remove from heat. Stir in water and vinegar. Bring to a boil, stirring constantly. Boil 1 minute. Carefully combine sauce, potatoes and bacon. Keep warm until ready to serve. Makes 3 to 4 servings.
