Ingredients
- 1 c. softened butter
- 1 c. Caster sugar
- 4 eggs, beaten
- 2 c. plain flour
- grated rind of 1 lemon and one orange
- 1 tsp. baking powder
- 3 Tbsp. fresh marigold petals or 2 tsp. dried
- granulated sugar (optional)
Method
- Cream butter with sugar and add eggs, one at a time.
- Sift flour with baking powder and fold into creamed mixture.
- Add grated rinds and marigold petals.
- Spoon into prepared 2-pound loaf pan or 2 (1 pound) loaf pans.
- Bake in preheated 350° oven for about 1 hour for 2-pound tin; about 40 minutes for 1-pound. Sprinkle with granulated sugar about halfway through if desired. Cool 5 minutes.
- Remove from tin.
- Serve just when cool.
- Keeps well and can be frozen.
