Ingredients

  • 1 c. softened butter
  • 1 c. Caster sugar
  • 4 eggs, beaten
  • 2 c. plain flour
  • grated rind of 1 lemon and one orange
  • 1 tsp. baking powder
  • 3 Tbsp. fresh marigold petals or 2 tsp. dried
  • granulated sugar (optional)

Method

  • Cream butter with sugar and add eggs, one at a time.
  • Sift flour with baking powder and fold into creamed mixture.
  • Add grated rinds and marigold petals.
  • Spoon into prepared 2-pound loaf pan or 2 (1 pound) loaf pans.
  • Bake in preheated 350° oven for about 1 hour for 2-pound tin; about 40 minutes for 1-pound. Sprinkle with granulated sugar about halfway through if desired. Cool 5 minutes.
  • Remove from tin.
  • Serve just when cool.
  • Keeps well and can be frozen.
